Freezer Breakfast Stock-Up

Freezer Breakfast Stock-Up, finished batch

Three different formats means breakfast doesn't become the same egg muffin every single day for two weeks straight. Rotate muffins, burritos, and a fresh batch of oats mixed up on the Sunday in between. The whole point of this template is removing the 6:45am decision entirely, not just batching one recipe.

What You'll Make

Session Steps

  1. 1

Start the egg muffins first. They need oven time you can leave unattended while you cook the burrito filling on the stovetop.

  2. 2

Cook the chorizo, beans, and scrambled egg for the burritos while the muffins bake.

  3. 3

Assemble and wrap the burritos once the filling's cooled slightly. Rolling hot filling into a tortilla tears it.

  4. 4

Portion the overnight oats into 4 jars last, since they need no cooking at all. This is the five-minute cooldown step at the end of the session.

  5. 5

Cool the muffins and burritos fully before freezing: muffins on a tray first so they don't clump, burritos wrapped individually in foil.

Storage & Reheating

Egg muffins and burritos: freezer, up to 2 months. Overnight oats jars: fridge only, up to 4 days (they don't freeze; the texture goes grainy). This is a fortnightly template rather than weekly specifically because the oats jars only cover the first half of that stretch. The muffins and burritos in the freezer carry the second half.
